The Journey from Bean to Cup


  • Growing Conditions Matter: Specialty coffee thrives at specific altitudes and climates — often higher elevations where slow ripening develops more sugars and nuanced flavors.

  • Harvesting Matters: In specialty coffee, only the ripest cherries are picked. In contrast, commercial coffees often include underripe or overripe cherries, resulting in uneven flavors.

  • Grading Matters: Specialty coffees undergo rigorous tasting (called "cupping") by certified Q-graders. A score below 80 disqualifies it from being called “specialty”.

  • Roasting Matters: Instead of roasting to "hide," specialty coffee is roasted to "reveal" — allowing you to taste delicate notes like jasmine, berry, caramel, or citrus.
